Grilled Chicken Quesadillas So yummy they'll make your head explode

I've set out to make my own version of the Qdoba adobochicken. The main purpose, quesadilla's!!! I'm sure it would be good with steak too but might need some adjustments. The chicken ends up having a spicy citrus flavor and is melt in your mouth tender. So try them out today!

Here's what you'll need:

  • 1 lime, juiced
  • 1 orange, juiced
  • 1tbsp chili powder
  • 1tsp to 1 1tbsp cayenne pepper (to taste)
  • 1 to 2 tbsp ground cumin (to taste)
  • 1 large clove fresh garlic, minced
  • 1tbsp to 3 tbsp of Chipoltley hot sauce (to taste)
  • 1/4 cup white vinegar
  • 1/4 cup oil
  • 2 medium to large boneless skinless chicken breasts
  • 1 large green pepper
  • 1 large onion
  • 1 jalapeno pepper, chopped
  • 1lb or more of your favorite cheese blend
  • 1 package of large tortillas 10" or larger

Juice the orange and lime into a measuring cup. Rolling the lime and orange around on a hard surface will help get the juices out. You should have about half a cup or more of juice when done. Mix in the vinegar to this as well.

Mix the dry ingredients, garlic, and jalapeno pepper into the measuring cup and mix very well. Mix in the oil into the measuring cup.

Flatten the chicken breasts. Do this by placing the meat on a long stretch of plastic wrap on a hard flat surface and fold it over. Then smack it with a heavy object such as a pan or like I use a cutting board. Pour a small amount of the mixture into the bottom of a bowl. Place the flattened chicken into the bowl. Pour most of the mixture into the bowl, cover and place in the fridge for an hour to two hours.

Cut one or two 1/2 inch thick slices of onion. Place the onion in a bowl and pour some of the mixture over the top of the onion.

Cut a small hole into the top of the green pepper and pour some of the remaining mixture into the inside.

Heat up your grill using your favorite charcoal or lump charcoal and spread the coals evenly.

Place the onion slices and green pepper directly over the heat until slightly browned, flip as needed. Place the onion and pepper off to the side of the grill. Place chicken directly over the heat. Cover the grill. Allow chicken to brown on one side before flipping. Flip only once.

Remove all food from the grill once throughly cooked.

Cube the chicken, pepper, and onion.

Place cheese, chicken, onions, and peppers into the tortilla. Place onto a pan and warm until the cheese is melted.

Serve with your favorite salsa on the side.
